it works either way, it's just that since gravity moves "DOWN" from a 2D point of view, it's usually represented as a negative number.

indeed for this, use the magnitude 9.81 [m/s^2] to be safe, as the basis coordinate system is arbitrarily chosen. See, that's the point, the physics doesn't change no matter what coordinate system you choose. But still, 9.81 is just 'g', which is the ~1/r^2 gravity field const from the mass of our planet in F=GMm/r^2=gm. Anti-gravity would have to be way more complicated, hense the cat. Also toast.

Like others have said, the leading sign is negligible since it depends on your reference point. In the case of these 2 YTMND's, the original used 9.8 to signify towards Earth, so the opposite (away from Earth) would be -9.8. In conclusion, you shouldn't care so much about details like this.
