How do calculate the required number of cows to make a patty for such a burger?

slide rule.

A sliderule would be good for a "back of the envelope" calculation. To be accurate I think you would want to find the average weight of cows selected at random and subtract the weight of unusable material (organs, bones etc.) and using matlab determine the ratio of cow density per cubic meter to the density of concrete per cubic meter. Once you have the ratio you could code a handy dandy input output calculator in C so you only need to know the volume of the building.

I'm watching the video right now. The pop-up slides opening in new tabs are annoying though.

I have always wanted to see someone work in the part at the end of that lecture where he is taking questions from the audience and koen says "you know my wife always asks me why do I have to go for the jugular"

So much good editing material there... its a shame its left uncut. Particularly for those of us who've already watched the lecture.

It turns out it's not just engineers in the United States who use rules of thumb. Ask an engineer in France and they will say "OOOOH LA PEEP"

Rule of thumb? Can't do much damage with that... should have rule of the wrist!

As a civil engineer, I can tell you that sirloin stake is the golden ruler for conduit-filled buildings.
